Pebble Onebird was born from one simple idea:
A truly great restaurant should exist naturally within the everyday life of a neighborhood.
We created Pebble Onebird by imagining a place that is open to everyone — a place people can use casually and regularly, and one that makes them think, “I’m glad a place like this exists in my neighborhood.”
No matter the season, morning, afternoon, or night, we want Pebble Onebird to be part of everyday life.
On cold days, we hope our warm bowls of ramen bring comfort to both body and soul.
On hot days, we hope our refreshing Khao Man Gai restores your energy.
For those who love spice, our fried chicken can be enjoyed at your own preferred heat level.
For early mornings, we offer freshly baked breakfast sandwiches — a small luxury to begin the day.
And for birthdays, office celebrations, and gatherings, we prepare catering packs made to be shared around the table.
Chicken is one of the most universal foods in the world, loved across cultures and continents.
I was born in Japan, but raised by the world.
Even here in America — a place where people of many religions, cultures, and nationalities live together — I wanted to create a restaurant that makes people feel, “I’m happy a place like this is nearby.”
Pebble Onebird was created while imagining the smiles and everyday moments of those guests. Through food, we hope to enrich daily life, even in a small way. To us, that means:

Taichi Ishizuki / Founder
Founder Background
Pebble Onebird was founded by Taichi Ishizuki, a Japanese-born restaurateur with more than two decades of international restaurant experience.
Leaving Japan at 19, Ishizuki traveled through Australia and Asia before moving to the United States at 27. Over the past 20 years, he has led more than 30 restaurant projects across North America, Europe, and Asia.
For ten years, he served as CEO of AFURI USA, leading the brand’s international expansion and establishing 22 licensed locations worldwide.
In addition, he co-founded / CEO of Kushi-Katsu Tanaka USA, launching the Japanese brand’s presence in the United States.
In 2025, Ishizuki founded Pebble Moon & Co., the hospitality company behind Pebble Onebird. He also operates Pebble Hiroo Terrace, an all-day brunch restaurant in Tokyo.
